Banana Pineapple Chocolate Chip Squares

rice flour, ground almonds, tapioca flour, pink salt, baking powder, ground flax, cinnamon
dried pineapple, frozen bananas, mini chocolate chips

1/2 c rice flour
1/2 c ground almonds
 under 1/2 c tapioca flour
dash cinnamon
dash salt
1 tsp ground flax
2 tbsp chocolate chips 
drizzle almond butter slightly on top

simmer 2 dried pineapple rings in a little water
frozen bananas taken out to thaw somewhat, when able to cut just chop up 
chop the pineapple and keep about 1/8 c of the water
mix the fruit in the dried ingredients after stirring up thoroughly with hands
add the water
stir up to moisten all
use 11 x 7 x 1.5 inch baking pan. Slight amount of olive oil to grease or no oil and parchment paper to line
Bake for 15 minutes at 400, then about 10-15 at 350. Keep eye on it.
Cool and slice about 15 squares

GF Veg Patties

I don't have exact measurements on this and went by memory.

Brown basmati rice cooked well
Cooked potato
White jasmine rice cooked well
Bit of hummus
Saute in water: green onion, shallot, Italian parsley, grated carrot, frozen mixed veg (corn/peas/carrots/green bean), red/yellow peppers, roasted garlic - a little chili powder, Bragg, pink salt

In large bowl probably a cup of brown basmati rice, some white jasmine rice, potato, the saute veg mix, a bit hummus. Mix the veg in less the liquid. Save the liquid broth to drink if you like, it's good. Mash all up. Add some ground almonds. Add some rice flour.

Form patties, about 8 large. Cook on parchment paper on baking sheet.
Can dab some ketchup on each patty and spread a bit with spoon.
Patties in oven, flip carefully after about 15 minutes. Can add ketchup to other side and spread. Bake another 15-20 minutes, depending on what you like.
